Mushroom Soup

Make your own version of mushroom soups, that are healthy but super yummy!

Ingredients

  • 1 tablespoon olive oil

  • 2 leeks (chopped)

  • 16 ounces cremini mushrooms (chopped)

  • 2 tablespoons tamari

  • 2 large garlic cloves (chopped)

  • 1 tablespoon thyme leaves

  • 3 cups vegetable broth

  • 1 pound cauliflower (small pieces)​

    • Season them however you like​ (use sea salt & black pepper)

Instruction 

  • Heat the oil in a pot on medium heat. Add the leeks, salt, and mushrooms and cook for 5-10 minutes, or until the mushroom is soft.

  • Add the leeks, celery, and ¼ teaspoon salt and cook for 5 minutes, stirring occasionally. Add the mushrooms and cook until soft, 8 to 10 minutes more.

  • Add in the tamari, wine, garlic, and thyme, while stirring. Add the broth and the cauliflower. Cook until the wine evaporated and the cauliflower becomes soft.

  • Use a blender to blend it until smooth

Notes

  • If the soup is too thick, add more water to the blender
